Pour 3 cups of water into a medium sized pot on the stove and let sit at medium heat until hot. It should take about 5-7 minutes for the water to be hot enough. It does not need to be simmering or boiling.
Sort your lentils by spreading them on a flat surface and picking out any debris, shriveled lentils, or anything else that looks like it doesn’t belong. Yellow lentils, or lentils that have lost their skins are ok.
Rinse lentils well in a colander in the sink.
Pour rinsed lentils into hot water.
Gently simmer your lentils with the lid tilted for 25-30 minutes or until they are at your desired tenderness.
